Peel, cut, boil 6 medium/large potatoes. Drain water and pour potatoes into a 2qt casserole dish.
In a saucepan, combine:
2 (heaping) cups of shredded cheddar cheese
1/4 cup margarine
Stir until almost smooth, remove from heat.
Blend in 1.5 cup sour cream (500ml container), 1/3 cup chopped onion (or more is okay), 1/4 tsp. pepper. Pour over potatoes and give it a little shimmy.
At like...375ish degrees, bake 40 minutes with lid on, 10 minutes w/o lid (or watch on broil)
*Sometimes, I sprinkle a bit of red pepper flakes in for a bit of heat & zing.
These are the BEST thing ever!! I love how they have a lemony taste b/c of the cheese/sourcream/onion combo. SO GOOD! Great leftovers too!
Note: These are very different from Scalloped Potatoes, b/c they are actually good. (i hate sp's)
